What's your favorite dinner to eat at home? (or supper....but THAT'S a whole OTHER topic! B) )

The best meal your spouse (or YOU) cook? The one that makes your mouth water just thinking about it?

(can you tell I need ideas for our meals next week? :lol: )

Favorite Meal... Grilled Teryaki Salmon with fettucini noodles and alfredo sauce. Booyah, that's some good stuff.

Favorite meal is a cajun gumbo type dish. I kinda made it up.
1 smoked sausage cut up into bite sized pieces, fry it in a skillet.
chop 2 chicken breasts into strips and fry in sausage grease to seal the meat on med/high heat. don't cook too long or it will cook the moisture out of the chicken. just seal it.
Boil up some egg noodles and drain water
add sausage
add chicken
add some shrimp /as many as you like already peeled bite size.
add 2 jars of alfredo sause maybe 3 depending on size of jar.
add cajun spice to liking. I use Creole Seasoning by McCormick
Let simmer on stove for about 1/2 hour or until chicken is done.
It's way better the second day.

OK - now that it's safe...
I usually get some rice going - 1 cup of white and 1 cup of brown. I also get either chicken tenderloins or ground meat going in a skillet. Then I go through the spice cupboard and figure out what nationality this meal will be. Mexican, Italian, Chinese etc.

My current favorite is pan-fried burritos. First I make "Big Daddy's Signature Arroz con Pollo." I get the massive whole wheat tortillas (this week, I got spinach wraps), and put a little cheese in the tortilla. My urologist tells me cheese is a condiment, not an entree. I then put the hot Arroz con Pollo on top of the cheese and fold it over. I put it in the hot oil (butter tastes even better!) and saute it until the tortilla stays folded.

The kids love 'em! Plus, they actually don't complain about eating veggies!

My Arroz con Pollo recipe:

1 cup white rice
1 cup brown rice
1 small bag frozen mixed veggies
1 can tomatoes (plain, mexican seasoned or Ro-Tel)
2-3 cubes chicken buillion
Herbs and spices to taste: I use
  • cumin
  • cayenne
  • oregano
  • tarragon
  • basil
  • rosemary
  • seasoned salt or Ms. Dash
3-4 chicken tenderloins

Get the rice going. Use about 1 1/2 as much water as the rice calls for. It'll take about 20 minutes to cook after the water is boiling.
Season the chicken tenderloins with cumin, oregano, cayenne etc. Cut the chicken into about 1/2" cubes.
10 minutes after starting the rice, add the mixed veggies to the rice.
5 minutes later, add the tomatoes and chicken.
Stir.

Serve with hot sauce, cheese and anything else that sounds Mexican.

I think mine & DH currently is meatloaf....but NOT the boring kind! :lol:

I use a mix of hamburger, ground pork and some ground chorizo sausage. Smoosh all that together, add an egg, some milk (or cream), and breadcrumbs so it's the consistency you like.

Put it in your baking pan, dump some chili sauce over the top of it, & bake I think at 350 or 375 for about an hour....

I usually serve some kind of rice or Lipton noodles with it....

I like foods that energize the body, make me feel good, not weighted down, and that satisfy me. That could be anything.

I do take normal recipes and turn them around to make them healthier. Some people have commented the dishes do taste somewhat different, but not significantly. What they have found is that often times after they eat the similar meal cooked traditionally, they feel not so great and not energized.

Like, one of the things I use in place of cornstarch or flour is arrowroot. I never use lowfat things, rather I use full fat in things. If we use dairy, it's usually goat's dairy, which is easier on the digestion system. That includes cheese.

The foods I actually eat are very tasty, artful, beautiful, colorful.

Some of the meals we've had this past week is chicken curry, which I love all different type of curry dishes. We've also had chili, beef stew, bean salad, all sorts of delicious salads. All these are pretty easy to make, filling, and very healthy. Nothing to feel guilty about.

I need your recipe for chicken curry.

I use commercially available (in Yewsten) blazin' curry paste in mine. Canned tomatoes, chicken, peanuts, in a wok with olive oil. I serve it over rice.
