Secret....marinade, that is!!
I was just getting dinner ready for tonight and after throwing together my marinade for the beef tips I'm cooking, wondered what everyone else does?
I don't really follow a recipe....olive oil & usually balsamic vinegar thrown in a gallon baggie, put the meat in there & mush around, let sit in refrig.
For fish I usually just marinate it in Italian dressing.
What about you guys?

Olive oil, white wine vinegar, dijon mustard, crushed garlic (I usually just smash a clove and throw it in) salt & pepper.
That's it. Sometimes I throw in lemon or lime juice too...depends on what I'm serving with it.

What's that mean? Do you make your own? Or use a store brand? (that's what I buy, usually)

Marinate? Usually I don't think about meals that far in advance. 'Course, that's part of my problem. When I do think about it, Goya makes some stuff called "Mojo Criollo" that's really good. I always have to add honey 'cuz my wife and kids think it's too tart.
I have tried a lot of stuff, and none of it's as good as just tossing meat (chicken or beef strips - can't afford much more than that!) in a buttery cast iron skillet with italian herbs, chopped onion and garlic. If I'm cooking just for me, toss in a habanero or scotch bonnet for flavor!

For me...usually a Red Wine base.....but....I end up drinking more of the wine and never actually making the marinade. :thumbsup:
