hi-hat cupcakes FROM SCRATCH today. Took me SOOOOO long...and lost 4 in the process. Next time I should start with an easier recipe - although I bake a lot.

What's the deal with making things from scratch? I don't get it. I bake and cook from scratch all the time. Is this how LAZY this generation REALLY is? :dunno:

Then again, I'm just a sahm who has "all kinds of time on her hands"...:rollseyes:

I NEVER bake from scratch.........well, maybe cookies but never cakes or stuff like pie dough........I'm lazy...... B) :wave:

Honestly? I think that's the main reason!! :D

I enjoy baking but not enough to make it a whole day affair, yannow?

I don't mind the baking from scratch. It just took A LOT longer then expected...

It was just time consuming. Made the cupcakes (chocolate sour cream) from scratch, baked, cooled for 10 minutes, loosened the tops from the muffin pan (they are big top cupcakes) inverted on cooling rack until completely cooled. The inside frosting (white almond/vanilla fluffy marshmellowy deal) took about 15 minutes of just standing over the stove top with an hand beater waiting for it to form soft peaks :rollseyes: . Then cool for a bit to pipe on the cupcakes. Started piping and it was too heavy for some cupcakes so they fell apart or fell over from the weight. Cool for about 10 minutes and while melting chocolate over a double boiler. Chocolate melted. Dip cupcake in the chocolate upside down. All the frosting of one ended up in the chocolate so I lost another one :doh: (I researched the recipe on line and that was a major complaint of peeps)...so I had to carefully spoon the chocolate over, not too thick b/c it would become too heavy, etc. It was just rather tedious. I'll attempt another recipe next week maybe but it won't be the same one... :screwy:
