Last night, we had leftover enchiladas. No, that's not enchiladas from the night before, it's enchiladas made with leftovers. I think it was a really neat idea - and the kids loved 'em!

Heat the meat with 1/2 can enchilada sauce. I did it in a skillet until it was bubbly. Set it aside.
Spray a baking dish with Pam. Put a layer of tortillas on the bottom. Spoon the meat - the more the better - evenly over the tortillas. Put anoter layer of tortillas. Put the beans on top. Pour the enchilada sauce evenly over the beans. Another layer of tortillas. Spread the cheese over the top.
Cover with aluminum foil and bake on 400 for about 15 minutes. Remove the foil and lightly brown the cheese (5-8 minutes). |
My wife and I put the enchiladas over top of a salad.

On Monday night we had my Summer Packet Flounder.
It's my own mix of stuff. You take any white fish, put it in foil. In a bowl mix a couple chopped up tomatoes, red onion, garlic, jalepeno. Salt & Pepper, little olive oil. OR since I'm doing a fat free diet these days I just poured some white wine over it. Mix it all up, pour it over the fish. Close up your foil packet, and either grill or bake. Time depends on what kind of fish you use, thickness, number of filets, etc. I've done it with flounder and tilapia. We preferred the flounder I think.
You can serve that with baked potato or rice.

Last night I made my own black beans & rice.
Browned up a pound of Italian sausage in a large pot, added some chopped onions in there while it was browning. When it was done, I took off SOME of the fat, then added 2 cans of black beans (drained & rinsed). Added some water, just to give it a little "juice". Seasonings to taste. I put in a bunch of Crystal and some Worschectsierisrter B) sauce.
Served over rice.

Last night I made Dover Sole with a parmesan bread crust on it. Served with broccoli and a green salad (included lettuce, cucumber and avocado -we are anti tomatoes) dressed with a lemon/oil dressing. :popcorn:

Cool! Spaghetti Enchiladas!
I'll make some and take a picture just for you - next time we have spaghetti.
'Course, we rarely have leftover spaghetti. That's the reason my belly's so big!

I was never a big fan and my kiddo's don't like them. My youngest will eat them but he prefers avocado which we ALL love!
Are you a fan of tomatoes?
Tonight is bone in/skin on chicken breast (I'm waiting for a *guy* to comment on the word breast) baked with a lemon/thyme marinade. Roasted potatoes and a green salald again...

I like tomatoes okay.....Andie loves the grape tomatoes.....should add those to my list for next week.

We had a "Campbell's Cheesy Chicken" bake thingy. But it's never good enough on its own. So, I cooked up some rice (then noticed the package had rotini! :doh), chopped up brocolli and cauliflower, sprinkled real cheese over it and baked it according to directions. Pretty good! I just enjoyed some more of it a few minutes ago (early midnite snack).

Tonight was Penne Pasta with Chicken Alfredo (so not healthy:doh: ) and a green salad.
Tomorrow is Chicken with coconut/curry over steamed rice...kiddo's like it... :dunno:

I cooked a pork roast all day in the crock pot, had rice pilaf with it.....pretty good if I do say so myself plus leftovers for Ty to take to work tomorrow... :thanks:

Golfingmom -- you can bake pretty much anything in your crockpot. Go to CHACHA ( B) ) and ask for crockpot recipes.
I do roasts in it, mostly. Pork roast or beef roast, throw it in there seasoned however you like, spoon a can of cream of mushroom soup around it (not diluted), add some onions if you want, & cook on low for 6-8 hours.
I also do whole chickens, same way, turns out so good!!! :drool:
Last night we had stuffed green peppers, turned out pretty good, I didn't have a recipe so I just browned some ground beef with chopped up onions, added a can of tomato sauce with a little water, some rice, pepper, garlic powder, Worschesteiserier sauce, and let it simmer. Then stuffed it into the peppers, baked for a half hour and sprinkled some cheddar cheese on it at the end.....

I don't know what we're having tonight.....maybe pick something up at the store when we go.

Tilapia is good...if you get the right kind. Some of them taste more like catfish :puke:
Tonight is a roast, potatoes, carrots, celery. I'm cooking it in the slow cooker (first time EVER) so hopefully it turns out yummy :thanks:

hey - Sunday night was our fish/okra fry night! We do that about every three months. It's good, but all that grease really gets to me!
My wife makes a fantastic batter for fried fish, fried okra, fried green tomatoes (it's not just a movie!) and just about anything else you may want to fry. I had leftovers for dinner tonight. :)

I don't mind CatFish when I want that CatFish, muddy taste. Tilapia is so nice and 'light' but sometimes you get a 'muddy' filet and blah... :faint:
