It's cuban, kinda, I guess....or mexican? Anyways, it's got a really good flavor, saffron is what makes it yellow...
Now....what the heck is RED rice???? :blink:

Red rice is what we called Mexican rice LOL It's made with chili powder.

No, I did it in the oven. I prefer to make it this way when I'm making gravy with it. If we're using it for burritos, then I'll put it in the crock pot.
I made a ton of gravy so my hubby divided the left over meat for two meals. One is for Cuban pulled pork sandwiches and the other is for open-faced sandwiches. mmmm Pork fat definately rules!

I'm making a berry salad (with stuff like blackberries, strawberries, and a raspberry vinaigrette, along with the spinach and walnuts) and pudding for desert.
This is assuming I get the dishes done so that I can do anything, AND that my husband is coming home tonight. Otherwise I'll just have a banana.
