Well, no lovin for me tonight :(.... found me this lil mexican buffet an gorged mysef... I cain't git my zipper up on my coveralls no more :wall: stupid stupid stupid unzippin em in the first place.....

Now Sarah ain't goin to go anywhere near my southern regions wit this bomb sittin in my belly, I'm still 3 hours from the house, I'll be lucky if I don't jes blow the cab up LOL

Good, I mean good.. well I've had better, but really good carne gusiada here an in a buffet as well, mix a lil rice a lil beans boy howdy I'm set. Clay have a looksee next time you come through Refugio, Taqueria resterranut, jes south of the DQ, wasn't all that expensive either, got me a glass of tea big enuff to gag a mule an only cost me 9 bucks. That's a dern sight better then some of run cross in the past.

Reckon Jr's. jes goin to havta wait one more day :(

Was it Taqueria Guadalajara in Refugio? They got comidas buenas!

I started replying before I actually read your entire post. Yeah - that's a good place to eat!

We go through Refugio all the time on the way to Corpus. It and Odem are the only places we slow down. Highway bypasses everything else.

Well - I can sympathize with the beans. My problem is Vietnamese "Sriracha" sauce. It looks like ketchup, but the ingredients are "Ground red chiles, sugar, garlic". It's hot, tasty and gives me bad breath that'll kill an elephant at 40 feet.

Yeah Clay, thats the place, been meanin to stop in there for years but its not an easy place to git into when theres buses an other trucks in there, but I had a clear shot in an out an took it. Beans don't bother me none, but that seasonin in the carne gusada, best watch out! LOL

Not much really, only made three trips, 4 cheese enchiladas, 2 plates carne gusida, 2 plates rice an beans, 2 tacos, couple of tortillas an a handful of chips, an I furgot dessert :(

Their flan's pretty good. I've only stopped in there a couple o' times. It's so close to Corpus that it's hard to justify stopping there often. :( That's only 45 minutes from Mom & Dad's house.

Erm.. it wasn't anythin to do wit sex really... I've been accused of bein to straight foward an to open, it's never bothered me really...... hmmm thinkin bout it though..... what the hell is the point of this thread?? Beats me... but I git lil lonely from time to time, an other then talkin to Sarah (who is unavialbe cause she's in mad house clean mode) I talk wit ya'll.... sorry if'n it's gratin on ya'lls nevers... jes says the word an I'll take my hike sniff sniff

Y'all remember the 'cream of brocolli soup' recipe I posted?

Last night, I made fish & brocolli enchiladas. I don't know if I can re-create it, but my wife and kids really liked them. It didn't cost much. 9 tortillas, 2 fish fillets, a 1/2 tube of saltines, cheese, milk, cumin, season-all, curry powder.

I enjoy cooking. Mexican food can be soooooo easy. As long as you have cumin, it will taste Mexican.

I'll have to give that burrito thing a try. Here's what I do for burritos:

Step 1: make arroz con pollo.

2 cups dry rice
2 cubes chicken buillion
season-all and cumin to taste
2-4 chicken breasts chopped to bite size
1 medium onion, chopped medium-fine
1 can Ortega chiles
1 can diced tomatoes (Ro-tel works nicely!)
Prepare the rice in about 2 cups water with the buillion, cumin and season-all. Saute the onion and Ortega chiles until tender. Add the chicken to the onion and chiles, and saute over medium-high heat. Add the chicken and tomatoes to the rice. Continue cooking until the rice is done and the water is gone.

Step 2: make burritos

Get those big-honkin 18 inch tortillas. Large wraps work nicely, too. I've used spinach-flavored and jalapeno-cheese. One for each person oughta suffice.
Melt butter in a skillet - medium-high heat
Spread some cheese on the tortilla
Scoop some arroz con pollo over the cheese, leaving it in a lump.
Wrap the tortilla around the arroz con pollo and gently put it in the melted butter, with the unfolded side up (you want to sear the wrapping so it will stay shut). Then flip it over and sear the other side.
Serve hot!


I served these to my neice who hates Mexican food and she loved it! If you're so inclined, add beans.

quesadillas are easy to make, too....Andie'll eat just plain cheese, I brown some hamburger w/taco seasoning & add onions and/or green chilies to it for me & Ty.
